Ingredients:
- 1 pound large shrimp, peeled and deveined
- 1/4 cup soy sauce
- 1/4 cup rice vinegar
- 1/4 cup honey
- 2 tablespoons ketchup
- 1 tablespoon brown sugar
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1 tablespoon cornstarch
- 2 tablespoons water
- 1 tablespoon sesame oil (optional)
- 1 tablespoon sesame seeds (optional)
- 2 green onions, chopped (optional)
Instructions:
1. Prepare the Marinade:
- In a bowl, whisk together soy sauce, rice vinegar, honey, ketchup, brown sugar, minced garlic, and grated ginger until well combined.
2. Marinate the Shrimp:
- Place the shrimp in a large resealable plastic bag or a shallow dish. Pour half of the marinade over the shrimp, reserving the other half for later. Seal the bag or cover the dish and refrigerate for at least 30 minutes to allow the flavors to meld.
3. Prepare the Sweet and Sour Sauce:
- In a small saucepan, bring the reserved marinade to a simmer over medium heat. In a separate small bowl, whisk together cornstarch and water to create a slurry.
- Once the marinade is simmering, add the cornstarch slurry and cook, stirring constantly, until the sauce thickens (about 1-2 minutes). Remove from heat and set aside.
4. Preheat the Grill:
- Preheat your grill to medium-high heat. If using skewers, thread the marinated shrimp onto the skewers, leaving a small space between each shrimp.
5. Grill the Shrimp:
- Brush the grill grates with oil to prevent sticking. Place the shrimp on the grill and cook for 2-3 minutes per side, or until the shrimp are opaque and cooked through. Brush the shrimp with the sweet and sour sauce during the last minute of grilling.
6. Serve:
- Transfer the grilled shrimp to a serving platter. Drizzle with any remaining sweet and sour sauce.
