Healthy Soup Recipes with Pasta 🍲


1. Vegetable Pasta Soup Recipe 🥦🍅

   

   Ingredients:

   - 1 cup whole wheat pasta

   - 1 tablespoon olive oil

   - 1 onion, chopped

   - 2 garlic cloves, minced

   - 2 carrots, diced

   - 2 celery stalks, diced

   - 1 zucchini, diced

   - 1 can diced tomatoes

   - 4 cups vegetable broth

   - 1 teaspoon dried basil

   - 1 teaspoon dried oregano

   - Salt and pepper to taste

   - Fresh parsley for garnish


   Directions:

   1. Cook pasta according to package instructions. Drain and set aside.

   2. In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until fragrant.

   3. Add carrots and celery, cook for about 5 minutes.

   4. Stir in zucchini and diced tomatoes.

   5. Pour in vegetable broth, add basil, oregano, salt, and pepper.

   6. Bring to a boil, then reduce heat and simmer for 20 minutes.

   7. Add cooked pasta to the pot, heat through.

   8. Garnish with fresh parsley before serving.

   Ingredients:

   - 1 cup small pasta (like ditalini)

   - 1 tablespoon olive oil

   - 1 onion, chopped

   - 2 garlic cloves, minced

   - 2 carrots, diced

   - 2 celery stalks, diced

   - 2 cups cooked chicken breast, shredded

   - 4 cups chicken broth

   - 1 cup baby spinach

   - 1 teaspoon dried thyme

   - Salt and pepper to taste

   - Lemon wedges for serving


   Directions:

   1. Cook pasta according to package instructions. Drain and set aside.

   2. In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until fragrant.

   3. Add carrots and celery, cook for about 5 minutes.

   4. Stir in shredded chicken and chicken broth.

   5. Add thyme, salt, and pepper.

   6. Bring to a boil, then reduce heat and simmer for 20 minutes.

   7. Stir in baby spinach and cooked pasta, heat through.

   8. Serve with lemon wedges.

   - 1/2 cup fresh basil, chopped
