Easy Over-Easy Egg Recipes 🍳


1. Over-Easy Egg and Avocado Wrap 🥑🌯


   Ingredients:

   - 1 whole grain tortilla

   - 1 ripe avocado, sliced

   - 1 over-easy egg

   - A handful of baby spinach

   - 1 tablespoon feta cheese, crumbled

   - Salt and pepper to taste


   Directions:

   1. Lay the tortilla flat and arrange the avocado slices in the center.

   2. Place the over-easy egg on top of the avocado.

   3. Add spinach and sprinkle with feta cheese.

   4. Season with salt and pepper.

   5. Fold the sides of the tortilla over the filling and roll it up.


2. Over-Easy Egg and Sweet Potato Hash Recipe 🍠


   Ingredients:

   - 1 medium sweet potato, peeled and diced

   - 1/4 cup bell peppers, diced

   - 1/4 cup onion, diced

   - 1 tablespoon olive oil

   - 1 over-easy egg

   - Salt and pepper to taste

   - Fresh parsley for garnish


   Directions:

   1. Heat olive oil in a skillet over medium heat.

   2. Add sweet potato, bell peppers, and onion. Cook until the sweet potatoes are tender and slightly crispy.

   3. Season with salt and pepper.

   4. Top the sweet potato hash with an over-easy egg.

   5. Garnish with fresh parsley and serve.

   - 1/2 cup cooked quinoa

   - 1/4 cup cucumber, diced

   - Salt and pepper to taste

   - Lemon wedge for serving


   Directions:

   1. In a bowl, combine cooked quinoa, cherry tomatoes, cucumber, and red onion.

   Ingredients:

   - 2 small corn tortillas

   - Salt and pepper to taste

   - Sesame seeds for garnish
